Enter the doors of ENCORE and experience their culinary vision which covers an eloquent take on the freshness of European and Mediterranean ingredients combined with the rich flavors of Asia. At the helm of this gustatory journey is Chef Shan, who has worked with world-renowned chefs including Marco Pierre White and Izu Ani. He aims to bring his own expertise to the plates of ENCORE Riyadh. One of the highlights of the menu is the Raw Bar – wherein fresh seafood flown in from Spain, Greece, and Japan can be found. There are fresh oysters, sea urchin, toro tuna, lobsters, king crab legs, sea bream, halibut, turbot, and others that can be hand-picked and prepared to your specific liking. They have also curated their sushi offerings based on these ocean bounties, such as the Otoro Nigiri and Hamachi Carpaccio.
Their five-star starters include the tender, Josper-grilled octopus, with its play on charred notes from the grill, accented by the fruitiness of dried cherry tomatoes. The Prawn Harissa is an indulgent dish marinated in hot pepper paste and poached in butter; best enjoyed by dipping the side of toast into its sauce. For a taste of crisp verdure paired with authentic greek feta cheese, the Greek Salad is a must-try.
For the main course, you will find a variety of specialized dishes that include Italian-inspired recipes like the Truffle Rigatoni – served with extra black truffle shaved over your plate and the Spaghetti Alle Vongole – pasta noodles tossed in the liquid flavors of steamed, fresh clams. For meat aficionados, they have the Slow-Cooked Short Rib that’s been oven roasted for eight hours, basted with cumin oil.
Another landmark of ENCORE is their Beverage Bar, equipped with invigorating ingredients for both hot and cold drinks. Their mixologists have creatively crafted a number of signature mocktails with the use of natural ingredients and inventive combinations, such as the ENCORE Signature Iced Tea that’s infused with activated charcoal and Kumquat Mojito made with kumquat and mandarin juice.
