Norway Honors Its World-Class Seafood

Norwegian Ambassador to Riyadh HE Mr. Øyvind Stokke hosted a special seafood dinner at his residence to celebrate the increase of Norway’s seafood export to Saudi Arabia with as much as 42% last year. Invited guests were hoteliers, chefs, food importers and market players. “You are a test panel tonight”, Mr. Stokke said to his guests, “my chef Mr. Roshan Pradeep has made some new dishes he will try out. They are quite easy to cook, look delicious and taste like a deep, clear Norwegian fjord”.

Another chef Mr. Ashraf Mahdy presented the dishes for the guests explaining how they were made. Among the guests were the President of the Saudi Arabian Chefs’ Association Mr. Yassir Jad and TV-presenter and chef Gary McKenna, who said “I am so pleased that the Middle East market place are now recognizing that there is no substitute for the best quality fish other than Norwegian”.

At the same event new brochures were launched in English and Arabic, made by the Norwegian Seafood Council, with recipes for easy ways to prepare dishes of salmon and cod. One of them is shared in this Food issue of DQ Living.

Grilled Norwegian Salmon with Mango Salad (for 4 persons)

Ingredients:

  • 700g Norwegian salmon fillets without skin and bones
  • 2 tbsp. olive oil
  • Salt and pepper

Mango salad

  • 1 piece mango
  • 1 pot coriander
  • Fresh 1 piece chili
  • Red 4 tbsp. olive oil
  • Cold pressed 0.5 piece lime
  • Salt and pepper On the side
  • Rice

Procedure

1. Cut salmon into 4 serving pieces and brush with olive oil.

2. Grill or fry in a frying pan the salmon pieces for ca. 2 minutes on each side and season with salt and pepper.

Mango salad

1. Cut mango into pieces. Pick the leaves of the coriander plant, and cut the chili into small pieces.

2. Mix mango, coriander and chili with olive oil and lime juice. Season with salt and pepper.

3. Serve the grilled salmon with mango salad and rice on the side.
